Chocolate Pancakes

How to make a anything better: Add chocolate. My kids didn't like these at first (something really wrong there...), but are slowly coming around. Fresh fruit is a must. We alternate between raspberries and strawberries, but also love blueberries, kiwi, and the occasional mango.

1 cup flour
2 tbsp soy flour
3/4 c cocoa
2 tsp baking powder
2 tsp sugar
3 large eggs
3 tbsp melted butter or canola oil (I prefer oil)
1 1/2 c plain soymilk
pinch salt
1 pint fresh strawberries

Sift flours, cocoa and making powder together. Mix in the sugar.

In another bowl, whisk the eggs, oil, soymilk and salt.

Mix wet and dry. Should be a bit lumpy and like cake batter.

Use 1/4 cup scoop. Top with strawberries and a bit of maple syrup. They don’t keep so eat them all!

AHHH Curse you for posting about these delicious looking pancakes and curse me for looking at them at 8 AM on an empty stomach. Next time you make those just apparate some over to me I am sure it wont be too difficult with the vaste supply of magic in this family. MMMMM... Thanks for the recipe!
